Question
Hi, I was planning on making pizza dough tonight for an appetizer I'm making but I've just realized I don't have any all purpose flour left and I'm unable to get to the store this evening. I do have cake flour and I was wondering if that would still work... I just want to make sure that the dough isn't going to turn out wrong and I won't have time to figure something else out for this party.. thank you for your response!

Obviously this answer comes too late for your dinner party. We are not live online here, so answers are not immediate.

If you haven't already discovered this, cake flour will NOT work for pizza dough or any kind of bread dough. Cake flour is very low in gluten-forming proteins and so will not give you the structure you need for bread.

I can answer any questions about baking. The only thing I'm not too good at is baking pies, nor do I know much about high altitude baking.

Experience

I have been baking for over 30 years. One of my hobbies is creating recipes, most of those for baked goods. I made my own wedding cake. Currently I prefer to bake healthier things. I use a lot of whole wheat and other whole grain flours, and prefer to use less sugar or sugar substitutes in my baking. I do a lot with fruit.
