hi there,
i note that the cooking time for choc chip cookies is ard 12-18 mins but im not sure of the temperature... i tried yesterday and its doomed... i put 150'C and bake for 18 mins, the mixture melted lower and seemed soft, so i baked for 8 more mins and the top and last tray got burned. the middle tray is ok, is there anything i can do abt it?

I'm not sure if I understand what you did - it sounds like you baked 3 trays at once? I would set the temp at 180-190C. I prefer to bake one tray at a time, on the center rack. If you want/need to bake 3 at a time, then you will need to rotate at least the top and bottom trays half-way through.

I'm also not sure what you mean by the mixture "melting" - do you mean the cookies spread out? That is what they are supposed to do. The chocolate will be soft when it comes out of the oven, it takes hours for the chips to harden, even after the cookies firm up. The cookies are done when they begin to brown around the edges. If you like them soft, take them out a little sooner.

I have been baking for over 30 years. One of my hobbies is creating recipes, most of those for baked goods. I made my own wedding cake. Currently I prefer to bake healthier things. I use a lot of whole wheat and other whole grain flours, and prefer to use less sugar or sugar substitutes in my baking. I do a lot with fruit.
