Hi Elyse,
I have a recipe for carrot cake, which I have used on several occasions.  I love the overall taste of the cake, but I am not too fond of it's texture (regarding the shredded carrots).   I was wondering, is it o.k. to puree the carrots? Would it alter the cake's taste/texture in a bad way?  Thank you

Pureeing wouldn't alter the taste, but it might make the cake a bit heavier. Since carrot cake is already pretty moist and dense, I don't think it would make a big difference, but it may take a bit longer to bake because you will free up more moisture when you puree the carrots.

I have been baking for over 30 years. One of my hobbies is creating recipes, most of those for baked goods. I made my own wedding cake. Currently I prefer to bake healthier things. I use a lot of whole wheat and other whole grain flours, and prefer to use less sugar or sugar substitutes in my baking. I do a lot with fruit.
