Dear Ms. Grau,

I received a bread making machine for an early Christmas present and wanted to make more healthy breads like soy bread and almond bread. Can I just substitute soy flour and/or almond flour where the white bread recipe calls for "bread flour" in the booklet? or is there some other consideration I need to pay attention to. I search the internet for bread machine recipes using soy flour/almond flour and could find none even though I read soy bread and almond are good for you.

No, you cannot substitute these "flours". They are not really flour at all, just finely ground beans/nuts. You can replace 1/2 cup flour with either, but I would not recommend almond flour (also called meal) in a yeast bread. Add sliced or chopped almonds to a whole wheat bread instead.

I have been baking for over 30 years. One of my hobbies is creating recipes, most of those for baked goods. I made my own wedding cake. Currently I prefer to bake healthier things. I use a lot of whole wheat and other whole grain flours, and prefer to use less sugar or sugar substitutes in my baking. I do a lot with fruit.
