Question
My date nut bread seems to dry although I did not overbake it. Is there any way to rescue this? Would making a cream cheese icing or sugar icing drizzle help. My Mum used to make this and it would get more moist after it was refrigerated and wrapped in foil. I could not find her recipe and used one on line. The taste is fine but a little too dry. Given the cost of the ingredients I would like to rescue it. Thanks

I think the best thing to do is just to serve it with cream cheese or butter. An icing would only help the bites from the top, plus date bread is so sweet, icing would be too much, in my opinion.

I like to eat it with cream cheese anyway, because it cuts the sweetness for me. It's also good with a slice of pear on it, and a nice juicy ripe pear would help the dryness, too.

Experience

I have been baking for over 30 years. One of my hobbies is creating recipes, most of those for baked goods. I made my own wedding cake. Currently I prefer to bake healthier things. I use a lot of whole wheat and other whole grain flours, and prefer to use less sugar or sugar substitutes in my baking. I do a lot with fruit.
