Question
Hi Elyse,

I baked a pear cake.  How long can I keep it in the refrigerator? If I froze it, how can I thaw? At room temperature or in the refrigerator?

Thank you for your time!

Answer
Grace:
I'd say it would be OK in the 'frig for maybe a week. It should keep great in the freezer though, properly wrapped. I assume it is unfrosted? In that case you can thaw it at room temperature if you like. By the way, it really doesn't have to be in the refrigerator at all, though it may mold at room temp if it is very moist. It should be OK for a day or two at room temp.

Expertise

I can answer any questions about baking. The only thing I'm not too good at is baking pies, nor do I know much about high altitude baking.

Experience

I have been baking for over 30 years. One of my hobbies is creating recipes, most of those for baked goods. I made my own wedding cake. Currently I prefer to bake healthier things. I use a lot of whole wheat and other whole grain flours, and prefer to use less sugar or sugar substitutes in my baking. I do a lot with fruit.
