QUESTION: what i meant  is that what type of container is the dough placed in,so as the bread can"swell" to its long shape

Answer
The dough can be risen in a bowl or any other container. For the final rise, after the dough is shaped it would depend on the type of bread you are making. It might be a loaf pan, a baguette pan, other specialty pans or just on a baking sheet for a free-form loaf. Are you using recipes? They usually specify what kind of pan to use, though you don't always have to follow it exactly.

Expertise

I can answer any questions about baking. The only thing I'm not too good at is baking pies, nor do I know much about high altitude baking.

Experience

I have been baking for over 30 years. One of my hobbies is creating recipes, most of those for baked goods. I made my own wedding cake. Currently I prefer to bake healthier things. I use a lot of whole wheat and other whole grain flours, and prefer to use less sugar or sugar substitutes in my baking. I do a lot with fruit.
