Question
Hi,
I have an electric oven (Murphy Richards), I bake lot of breads and sometimes cakes.  My question is - at what is the best temperature to bake breads?  Does lower the temperature and longer time work better or does higher temperature and less time work better.  Its more of a generic question and not for some particular bread types.

There's no set temperature for breads. They bake from 340-450. Basically, the softer, more delicate loaves are done at 350-375, while the firmer, more crusty or heavier ones are done at the higher temperatures. If in doubt, I'd go with a higher temperature, faster baking time.

I have been baking for over 30 years. One of my hobbies is creating recipes, most of those for baked goods. I made my own wedding cake. Currently I prefer to bake healthier things. I use a lot of whole wheat and other whole grain flours, and prefer to use less sugar or sugar substitutes in my baking. I do a lot with fruit.
