QUESTION: My mother has been trying to find her long lost Red Velvet Cake recipe for the last 30 years.  She remembers making it in the 50's and it was on the cake flour box.  (She has written to both  Soft-a-silk & Swansdown to no avail.) The recipe did not have cocoa in it. She remembers souring the milk, beating after each egg was added, and red food coloring.  Thank you for any help you can offer on how to find this recipe.

I'm sorry, I couldn't find one in the sources I have either. Are you sure it didn't have cocoa in it? I've never seen one without it.

QUESTION: No, it had chocolate squares that had to be melted.  Also, the eggs were separated beating the yolks into the batter and the whites were folded in at the end.  The recipe was actually on one of the cake flour boxes but my mom thinks that it was removed due to the red food coloring.  It was baked in a 9 x 13 pan.

I can answer any questions about baking. The only thing I'm not too good at is baking pies, nor do I know much about high altitude baking.

Experience

I have been baking for over 30 years. One of my hobbies is creating recipes, most of those for baked goods. I made my own wedding cake. Currently I prefer to bake healthier things. I use a lot of whole wheat and other whole grain flours, and prefer to use less sugar or sugar substitutes in my baking. I do a lot with fruit.
