Bread & Pastries/Corn Flour use

Question
I have corn flour and need a recipe to use it preferably in a bread machine.  I have heard you can't use yeast with corn flour because it is gluten free is this true or can I just substitute corn flour for regular?

Answer
Elaine:
You can substitute some corn flour - maybe 1/2 cup, for some regular, but you cannot simply use a wheat-flour recipe with all corn. It is usually used in quick breads.

Are you saying that you are trying to make a bread and that is all you have, or do you just have some that you want to use up? You can use a small amount of it to replace all purpose flour in pancakes, muffins and even some cookies, like sugar cookies or shortbread.

Expertise

I can answer any questions about baking. The only thing I'm not too good at is baking pies, nor do I know much about high altitude baking.

Experience

I have been baking for over 30 years. One of my hobbies is creating recipes, most of those for baked goods. I made my own wedding cake. Currently I prefer to bake healthier things. I use a lot of whole wheat and other whole grain flours, and prefer to use less sugar or sugar substitutes in my baking. I do a lot with fruit.
