Question
Hi Ralph, its me again.  Please tell me if I can freeze french macaroons after baking and filling. These are made with ground almonds and conf. sugar, not almond flour.  They are filled with raspberry jam.  Any help will be greatly appreciated.

Traditional Macaroons are all egg whites and probably won't freeze well before baking.

However, you can bake them, and freeze them still on the backing paper for long term storage!

Do you know the book by Bo Friberg? He has two pastry books out, one fundamental and one advanced.

I think you are probably a good enough baker to benefit from both.

They really aren't for the faint of heart, but whenever I get stuck or need a good idea, I go to Bo!
