Hi, I do alot of baking and I just made chelsea buns however I am not sure weather or not they can be frozen or for how long, could you please help me out? what can be frozen and what cannot be frozen?

Hi Theresa:

I'm not a big fan of freezing baked goods.

However, Chelsea dough is very much like brioche.

So...if it were I, I would make the dough, and before it's allowed to proof...freeze it.

You can freeze it in small sections to pull out only what you intend to bake.

When you're ready, pull it out, slice them, let them proof and bake.

This way you will have pre-made, but fresh baked.

The Chelsea bun is very much like Brioche.

You can refrigerate the dough for a couple days or freeze up to a month.
