Question
i was wondering if there is a substitute for baking a loaf in stonewear with a lid? would placing tin foil over top of glass wear work?

Hi Kelly:

Baking in stoneware creates a fake oven effect.

It is what some do if they don't have oven stones, etc.

I just had a student of mine bake a loaf, no knead, in a cast iron dutch oven. The results were spectacular.

The tin foil/glass wear will never match that effect.

How about just getting an oven stone for your home oven. The results are nothing less than professional.

Just don't forget to add steam to the equation.
