HI Michael:

These are all the same product, and the same variety of dried, granular baker's yeast.

They can be interchanged as they are just different brand names for the same product.

None of these need to be pre-proofed as suggested.

You simply add them to your formula.

The best of all the yeasts is INSTANT...just plain instant. The difference is they granular size is smaller thereby removing any reason to wet the yeast before dumping it into the mixture.

The other form of yeast from which this comes is fresh, baker's yeast. It is wet, mostly water, and lasts only about three weeks.

The Instant yeasts, if kept dry and in the refrigerator can last up to a year.

No yeast should be kept in the freezer.
