Bread & Pastries - keeping rolls fresh overnight

Expert: Stephanie Gelman - 12/23/2004

Question
HI, I am planning on buying small dinner rolls fresh from a bakery in the morning xams eve. I do not have to serve them until the following afternoon on Xmas day. How do I keep them fresh until i serve them to guests?

Answer
If they are bakery fresh you should have no real problems.  You can do a couple of different things.

The Extreem:  Put them directly in the freezer.  Take them out about an hour before and let thaw (it won't take very long).  Wrap in foil and heat for about 10 minutes until they are just warmed.  Oven can be just about any temperature. The higher the oven temperature the shorter the stay

The causual:  Keep then in an airtight plastic bag on the counter.  When your ready to serve you can either heat them in the oven as per above or just put them in the micro (in the bag but leave it open for steam to escape) and let heat for 20 ro 30 seconds until they are fresh again.

You will get the best results with the freezer but it might be a tiny to moderate difference.

Hope this helps,

Chef Stephanie Gelman
