When being served from the trolley how much, and how, does one tip the Carver?  

Answer
You don't!

Waiting staff and serving staff tend to pool their tips.  The person who seats you at your table and takes the surrounding orders - starter, sweet, cheese, etc. would be the one you pay at the end and people generally either leave a tip on the table or add it to the bill.  Most staff would probably prefer a cash tip, not to evade tax, but just to ensure the staff receive the tip and not the restaurant.

We generally tip 10%.  If you think the service was exceptional, tip higher.  If the service is poor, don't tip.  It is the only way staff in catering will see they need to OFFER sevice to be tipped for it!
