Emoor,

My wife and I will be traveling from Dublin to Wales on
vacation.  My wife is quite set on visiting Wales.  I am
interested in the castles, of course, but we are clueless
regarding the best places to stay.  We do not want the
typical Large Commercial Hotel feel, and love Bed and
Breakfasts, etc.  

So what can you recommend in Wales, and after a couple
nights there, where to?

I have ventured into Wales, but have not spent enough time there to provide you with specific sights to see other than those recommended by any guidebook.  I can tell you that there are many B&Bs all over Wales.  Online, do a Google search by typing in "Wales B&B Accommodations" and you will be directed to hundreds of places.  In any city or village of any size in Wales, visit the local Tourist Information Centre. They will book accommodations for you in your price range.  This is the best way to hook up with just the right B&B.  After Wales, try the west of England, especially Cornwall.  If you want to visit a genuine fishing village on the west coast of England, try Port Isaac.  I can recommend a small hotel called "Headlands" at Port Isaac/Port Gaverne.  Eat local fish and seafood fresh out of the sea, and walk the Cornwall Coastal Path.
