what types of food can buddhists eat and why ?

Answer
The "why" is the important part. The reason to eat is to help other beings. In order to help others, you need the energy that you get from food. That's the only reason to eat.

As long as you keep this intention to understand yourself and help others, then do whatever's needed to accomplish it.
