What kind of insulation will I use to eliminate the sound of water running through the pipes installed in the ceiling of my dining room?

Hi Jake,
If its the water supply pipes, I'd suggest a pipe insulator (foam)
and some fiberglass insulation under and over the pipes. This assuming you can access them.

If its the waste pipes, Its hard to find pipe ins. that large, so use as much fiberglass as you can, but don't pack it tight, loose is better.
