Question
We would like to keep as much view as possible when
building the 3 season porch. What options are there
to accommodate the heat of summer and the cool of fall
and spring?

Answer
The minute you want the view, you are talking glass.  Next choice: closed up tight or open air.

Closed up tight:
Fixed glazing, thermal pane, aluminum or wood framing.  Plan on using heat and air for comfort.

Changing levels of open air:
Operable windows, thermal pane, any frame.  Screens on openings.  The traditional Florida type  open air glazing was the jalousie  e.g. http://www.milgard.com/windows/vinyl-windows/tuscany/jalousie-window.asp?crf=1

Sliding glass doors.

French doors.

Only you can decide about insects, screens, HVAC, etc.
