Building Homes or Extensions/counter tops

Question
I have formica counter tops in my kitchen - approx 3 feet on either side of my sink and a 6x2 feet top next to my cooktop.  my neighborhood is not one I want to invest much money, say in granite.  (older homes)what are alternatives to consider when thinking about replacing/improving

Answer
You will still get the most bang for your buck with a plastic laminate top, IMHO.  

Other things to consider, give or take in order of cost:  
Color core laminate - same stuff, but colored all the way through.
Ceramic tile - can be installed on top of existing laminate.
Solid surface - things like Corian, Quartzite, SilaStone, etc.
Ground and polished concrete.  Kind of all the rage.
Stone tops.  Very popular, but mixed reaction over the long haul - granite, soap stone, marble
