Question
how to successfully remove old brown paneling in a kitchen/dining room. will the sheetrock underneath have to be replaced? and does the sheetrock underneath have to be a certain size for these rooms in the house?

Hi Raquel,

Presuming the panelling is nailed onto counter battens and not glued  you should be able to remove it quite easily.Prise it off gently with a claw hammer or crow bar.Stripping it off in a uniform fashion.
The underlying sheetrock(gypsum) as you call it can be plaster skimmed to finish ,filling in fixing holes etc..  or papered over to receive paint.
