Question
how to invert a beam (header) on a load bearing wall?
The header is 8 ft and we want to open to 12 ft and make the ceiling height match in the 2 rooms

Answer
What you are describing is beyond most do-it-yourselfers.  You'll need to properly size and install the beam and provide new columns to support it down to the foundation, which may require new post footings.  After temporarily supporting the joists, you'll use (probably face-mounted) joist hangers to support them from the new beam.  To make it truly flush with the ceiling, in my experience, is sometimes impractical in older homes due to the required beam size and the existing joist sizes.  

It is the widening of the opening that makes this project particularly disruptive to the existing structure.  I would suggest that you talk with experienced contractors and/or a structural engineer.  I hope this helps; good luck.
