What software would I use to insert / adjust information on scanned documents?

If you want to scan text documents so you can edit them, then you want OCR software. OCR (Optical Character Reader) apps will take scanned documents and convert them to editable text, usually in Word and/or WordPerfect format. Top apps in this area are OmniPage, TextBridge and IRIS. Note that the quality of the conversion is highly dependent on the quality of the original. Clean documents with standard fonts and very little formatting will convert with an accuracy of around 95%. The lower the quality of the orignal, the more formatting or non standard fonts used, the lower the accuracy.
