Question I have a diamond ring that I would like to sell. I see the protection in place for buyers, but how can I be sure that if I send my ring to someone they won't switch the diamond and then return the ring to me?

You can't be sure that someone won't switch the diamond and return it to you. Every sale on eBay involves risk. If you aren't willing to take that risk, you probably don't want to sell it on eBay.
You might try selling it locally through Craigslist.
