Question
I would like to change an antique dresser into a bathroom vanity.  What is the best way to waterproof the top?  The sink will be inset, so the chances of splashes is definitely there.  Thanks.

Nice to hear from you.
You will need to coat the top with 3 coats of the best quality poly.
Make sure you also coat around the edges of the opening you cut to insert the sink.
This type of application for an antique dresser is certainly not recommended  nor practical in the family bathroom but great in a guest bath.
Always be vigilant and dry any splashes as they happen and it will be fine.
I like Minwax oil based fast drying poly but there are other good ones out there.
