how can i tell  if its varnish or schlack on a item i am fixing to redo

Nice to hear from you.
When you say you are redoing I assume you mean you are removing a finish and you want to replace with the same finish.
Trust me on this, you will know what the finish is after your first application of MC stripper.
Varnish is a sticky gooey stringy mess when softened with paint stripper and there is no mistaking it for any other finish.
Its miserable stuff to remove and takes several applications of stripper to get off.
Shellac on the other hand strips off easily.
But I'll suggest to you that you will likely not have a varnish finish. Perhaps shellac or lacquer.
