Question
I have just built a large dining table for my farm house in VT. It is 9' long and 4' wide. it is made from a center panel of Pecan wrapped with a 1 inch pice of walnut then wrapped with a 10 inch Birdseye maple with another 1 inch border of walnut around the outside edge. I want to finish so as not to damage the wood but do not want the sometimes cheap poly look. Also I am limited by the fact that the piece is so big I need something that I can work with that won't dry to fast. Was thinkin oil then varnish but not sure. Any suggestions welcome.

Hi Mike, sounds beautiful....and big! I would steer you towards WaterLox, a Tung oil/Varnish blend, that excels at protecting, ease of application, repair-ability, and will bring out the grain and beauty of the wood. Read about it here:

And you can get it at WoodCraft, Woodworker.com, and many other places. The only possible downside is that it is a bit dark, a color like Motor oil, so on the Maple it might be a tad darker that you want, depending on the density of the Maple you used, (soft vs.Rock for instance)....but it's really a great product, and you should know about it and have some to experiment with if you are a woodworker....
