Question
Greg, Oddly enough I'm in the same situation your were in back in 8/2008.  Working for a construction company I am looking to refinish the oak table tops at a restaurant I use to work at.  Can you tell me what finish you used; how it turned out for you?
Patrick.

Answer
Hi Patrick, I used a catalyzed Acrylic Urethane floor finish at the time, I believe...from Absolute Coatings....

I believe it was that one, and it worked well for light stained, small Oak table tops.I applied it with a pad painter. These finishes have changed a lot in the last two years, I would look into the two part Aluminum Oxide finishes as well, but am not too sure about their application idiosyncrasies, I think some (or all) of these are single coat systems...certainly a company like that would help steer you in the right direction, and that may be a few of their products...but the waterborne technology has matured to the point of superiority now, and multiple coats can be applied in a day because of the quick dry times as compared to oil based products...post back if need be...there are also catalyzed lacquers, varnishes and urethanes like the state of the art kitchen cabinet/office furniture manufacturers use...M.L.Campbells "Duravar","EuroBuild Clear" Sherwin Williams has "Kemvar" and "Polane" if you have spray equipment, etc., etc.
