Question
What's the best way to remove these to get at the screws?  I'm planning on simply drilling and chipping away with knife point etc., trying to avoid damaging the wall of the hole.

Hi,   you are 100% on the right track, and should remove them exactly as you propose to do.  It is sometimes possible to pop them out using an ice pick but that may also damage the surrounding wood, so I vote that you proceed as planned.  Most hardware stores carry new plugs, or you can fill the holes with wax sticks that match the stain - which are also available in most hardware stores.
