Question
my daughter bought a house that has a sink in an old sideboard cupboard.  How can we finish the top to be sure the water won't do any more damage?

Nice to hear from you.
I have seen old sideboards and dressers used for sinks many times, and they all have the same problem with water.
The key is to make sure the seal around the sink (under the sink lip), is waterproof.
Next is a good finish.
A good oil based poly is my choice for a finish, although spar varnish is good too.
And always wiping any water splashes after using the sink.
Karin, any finish will break down with heavy use and water , so you must remember the finish is "not for life", it must be watched for wear, and never let it get to the point where the water penetrates the wood. This is when problems start. Wood and water just do not mix.
