The steering on this old gal is very touchy, especially at speeds in the 30 to 50 mph range.  Is there a way to dial down the amount of boost the PS unit puts out; the sensitivity makes it a little dicey to drive?

Answer
This would NOT be pump pressure related.

Check your complete front end for loose tie rod ends, Pitman arm wear. Center link joint wear. ESPECIALLY check the IDLER ARM as GM's arms are famous for being loose. Even a brand new GM one is loose. Put in an aftermarket one.
