I had the same problem, but it would overheat if the car didn't have the defrost on. It turned out to be the wrong thermostat that was installed.

northstar motors are famous for head gasket problems, its probably putting exhaust gasses into the cooling system heating it up more than usual causing your overheating problem. if you know a garage with a gas analyzer see if they would use the tailpipe sniffer to check at radiator (without putting into the antifreeze).
