Cajun/Cajun stewed tomatoes

Question
I have a wonderful recipe for Cajun Corn Chowder.
It calls for Cajun stewed tomatoes.  I am
unable to locate them in our area.  Therefore,
I use my own home canned, regular stewed
tomatoes.  Could you please tell me how to
make Cajun stewed tomatoes?  Thank you.  Letha

Answer
Typically, Cajun stewed tomatoes have the "Cajun Trinity" in it - chopped bell peppers, onions and green onions, along with some garlic and some seasoning.  A good Cajun seasoning that is available all over the country is Tony Chachere's Cajun Spice.  It is my favorite one to use.  I hope this helps.  Let me know, if you'd like me to research a recipe on the stewed tomatoes.  I'm sure I can find one or two in my cookbooks.
