What is the white Cajun sausage that is made from rice with pork and seasonings?

Answer
The white cajun sausage you are referring to is called boudin (pronounced boo-dan).  Traditionally it is made by stuffing natural hog casings with cooked pork, pork liver, onions, seasonings and rice and then steaming or grilling it.  Now days it is sometimes made with a man-made casing rather than the natural hog casing.  Both ways are great, but I prefer the hog casings.  There are also other renditions including crawfish boudin, shrimp boudin etc. It really is a treat to the taste buds that everyone should try.
