...I have in my mind to get a canon EOS XSI, but now I just saw an ad selling a canon EOS "XS"...what, besides the price, is the difference?

The difference between the two camera comes down to the technology and specifications. The XS has 10 megapixels, the XSi has 12. The XSI has a better autofocus system, and better overall image quality. For the minor increase in price, the XSi is the better value.
