Question
Can you do long time exposure pictures with digital SLRs eg. For night photography, measred in minutes or hours? What brands of cameras should I look at?

Answer
I've never seen a digital SLR that would let you do more than 30 seconds of timed exposure.  However, if you get a shutter release cord you can set the shutter speed to "bulb" and lock the shutter open.  You could then time the exposure with a watch and close the shutter whenever you want.  Some of the higher end SLR's have special remote cords that have a little computer on the end  that may allow you to set times longer than 30 seconds. These are usually called "timed bulb" shots.  Nikon makes one called the MC36 that works with cameras that have a ten-pin remote socket.  Cameras like the D300 and D700 offer this socket.
