Our cooking traditions range from the traditional tortiere at Christmas to baked custard done "a la bain Marie". I was eating Poutine before the rest of Canada even heard of it. Question
Can you please provide me with a traditional French Canadian tortiere recipe.  You won't believe this but, my husband and I own a pub where we are having our first annual tortiere cook-off.  The real kicker is this pub is located in Calgary where most people don't know what tortiere is. In any case, I love tortiere and have never obtained the recipe from my relatives. Can you help me out?  PS Remember we're out to win the competition!!!  Thanks.

Hi Marietta!

Here's a traditional Quebec-style tortiere:

Quebec Tourtiere

Pastry for 9"pie
1lb Pork - lean ground
1 Onion, medium, chopped
Salt & pepper
1/2 teaspoon Savory
Cloves ground
1/4 cup Water boiling


Directions:

Mix meat, onion, spices in a saucepan Add boiling water. Simmer, uncovered for 20 minutes, stirring occasionally. Skim off any fat. Preheat oven to 375 degrees Fahrenheit. Roll out half of the pastry and line 9" pie plate. Place filling in pie plate and cover with the remaining pastry. Prick with a fork. Bake at 375 degrees Fahrenheit for 30 minutes or till golden.
