Dear Mr Allinson.

The British assault on Quebec when they tried to take back that former British colony from the French who had settled there against the wishes of the British Government at the time. They used some animal/bird to warn of impending attacks.
What was the animal/bird?

Dear Matt:
Your questions are a bit confused:
When the British conquored Quebec in 1759, it had long been a French colony up to that time, part of New France established in 1608. Therefore, the British did not "take back that former British colony from the French."
You say, "They used some animal/bird to warn of impending attacks."
Which/who "they" ? The French, or the British?
Either way, I have never heard of any particular animal used at Quebec for warnings. However, flocks of geese used to be quite often kept by various countries as effective "night sentries."
