We have the same problem so you are not alone.  Our springer is 12 mths old and is always on the lookout to steal a sock.  Chasing her has always resulted in what you describe and the best method for us is to to go and do something else.  She soon wants to know where you are and what you are doing and will follow.  Getting the object from her if she has not dropped it by that time is something we are still working on.
