Maybe you're just not looking at the action correctly.  My Coton is a wonderful dog.  Follows me around all the time.  Sweet and lovable, except when he gets excited and wants to play.  He plays hard.  Just like you described.  Runs around, barking, jumping, etc.  He acts like he's snapping or biting, but never does it.  After he wears himself out, he lays back down to rest.  We just laugh and play with him using a toy for his biting.
