I am 34, USAF-AD 7 years, E-6. BS and MS in Intel and National Security Studies.  Does the USAF have age waivers for OTS?  Do I have a 'better shot' in other branches?

Congratulations on getting your Master's degree.
Yes, I'd say you have an excellent shot at getting into OTS.  The AF has age waivers but you may not need it if you act soon.
Prior service enlistees can receive an "age waiver."  In most cases, the amount of age that can be waived is directly proportional to the amount of time you previously spent in the military.  For example, your 7 years of credible service in the AF could waive your maximum enlistment age to age 34.  (Maximum age of 27 for OTS, plus seven years credible service in the AF = 34).  If you're ready now, I'd recommend you act now, before you need a waiver.  If your recruiter tells you you must wait 18 months (or some other ungodly number) to get a class start date, tell him you wish to be placed on the "Short Notice" list.  Somebody is always dropping out at the last minute because they broke a leg, etc.

The AF encourages all officers to obtain a Master's degree, usually about the time you make Major.  Already having one will give you a huge advantage over your peers.  I know, I entered the AF with a Master's degree.  Plus you won't have to find the time to squeeze in college classes.  You already know how busy your work schedule can be in the AF.
Stick with the Service you already know best.  You'd have the same chances in the Army, or Navy, but you'd have a slight disadvantage because you're not familiar with their organizational structure, i.e. platoons, brigade, battalion, littoral warfare, etc.
