I'd like to find a way to incorporate coconut rum into a chicken recipe.  I'm a big fan of pineapple as well.  Any suggestions?

Hello !

Coconut, mainly the grated pulp of the dried coconut, is widely used in the Caribbean in recipies of mostly all foodstuffs... from fish to rice !

If you would like to combine pineapple, chicken and coconut rum on a grill:

For 4 servings:

Cut a medium to large chicken in pieces
Cut two green peppers in strips
1 pineapple cut in 1 inch squares
Cut 1 medium tomato in cubes
Chop 1 medium onion in small pieces
2 mashed Garlic cloves

Place chicken pineapple pieces, all seasoning and 2 cups of coconut rum in a kettle and let marinade for at least two hours.

Add salt and pepper to your liking.

Wrap each chicken piece in aluminum foil along with a generous ammount of the marinade.

Grill the wrapped chicken over a medium to high grill (avoid flames) turning every couple of minutes for half an hour. -ot until the chicken cooks well-

Open the wrappings and reserve, let the chicken brown to your liking over the grill.

Serve the chicken pieces with the remaining marinade.
