Caribbean Cooking/Coconut chicken

While recently in Mexico at the Rainforest Cafe we enjoyed pineapple coconut chinken fingers.  I have a Hawiian party this weekend and am going crazy loking for this recepie, the closest I can find is coconut shrimp.  Do you know of this recipe or what site I can get it at.  Thank you for your help

Searching for you I found this recipe:

For 4 full (both sides) chicken breasts, will serve 6

Cut chicken breasts in strips

Season with:

1 cup finely chopped white onion
1 medium green pepper finelly chopped
1/3 cup chopped cilantro
juice of 1 1/2 lime
1/2 cup wine vinager
1 grated coconut
salt / pepper to taste
stir chicken with seasoning
sprinkle with chile (paprika)
(add hot sauce if you like hot)

* Dice 1 pineapple (or use canned slices and dice in squares))

Let stand in the fridge for two hours

Grill pieces and add pineapple as chicken starts to brown.

Grill until chicken is brown and pineapple is tender
