Caribbean Cooking/Stewed chicken

Could you provide me with a simple recipe for cooking stewed chicken, Carribean style?

For one 3 to 4 pound chicken:

1 large white onion, chopped
1 large sweet pepper chopped
1 large tomato chopped
1 garlic dice
1/2 cup cilantro
1/4 cup vinagre
1/2 teaspoon salt
1/2 teaspoon oregano
1   treaspoonfull tomato paste

Cut chicken in medium size pieces (wing, 1/2 breast, etc).

Mash garlic with salt and vinagre.

Sprinkle this garlic mixture on chicken pieces.

Add onions, tomatoes, cilantro and one cup water.

Let stand for about one hour.

In a medium size kettle add 1/3 cup olive oil and place on stove to heat.

Add to oil 1 tablespoon brown sugar and add chicken pieces when sugar is caramelized.

Stir chicken pieces and add a bit of the seasoning -enough for to stop frying-.

Close kettle and lower heat.

Add tomato paste and stir.

Repeat until all the seasoning has been used.

You may add some dry white wine as a variation.

Turn off the heat.

Serve over white rice with stewed kidney beans and fried plaintains.
