Our cruise arrives back at 8 AM in Miami and I am wondering if an 11:50AM flight is too early to catch?

If you booked thru Carnival...no, they'll make sure you're there on time.  The only thing I can't tell you is if they put anymore security in place.  You should be fine with things the way they are now.  When you get on board go to the pursers office..tell them you have an early flight.  You do this early in the cruise, not when first boarding, wait for a day or so, then when they send you your cabin luggage tags for your departure, you'll be in the early off group.
