I need to make potato salad for 125 people... how many lbs of potatoes should I use?

Quite honestly, I do not know the answer to your question off the top of my head.  I did a little research and arrived at a conclusion of 1/3 pound per person. However, this could vary depending on how much other ingredients go into your recipe.  Also, are you serving other side dishes that - perhaps not everyone would have potato salad? This might effect your potato purchase as well - if given the option of several salad type items on a buffet - even potato salad lovers would not opt for as large of a serving than they might if that was the only similar side dish offered.
