Question
I will be catering a luncheon buffet for Golf Tournament for approx 90 people.
Menu will be sandwiches of ham,turkey, roast beef, varous cheeses, various breads and condiments, potato salad, baked beans, fresh fruit and variety of cookies.
Please advise what I should charge and the amount of ham, turkey and beef I should get.  Thanks for help.

To arrive at a sales price...you need to figure out what your costs will be. Food cost, labor cost, gas to shop and get to venue, misc. paper goods, serving piece purchase or rental, plate rental (or cost to have someone wash, etc.)linens if you are supplying, etc. Do not forget to add cost of your time...then add your profit % that you are aiming for...you might also make a couple of calls to local caterers to make sure that you are charging a fair local market value.

Based on your note...I cannot tell if you are premaking the sandwiches or if a deli buffet sort of deal....big big difference in quantity of meats that you will need - if you are deciding how much goes on each sandwich as opposed to the guests deciding.
