is it true that a Eucharistic Minister cannot attend a non-catholic wedding ceremony?

Thanks for your question.  No, to my knowledge, I know of nothing that states that a Catholic who serves as a Eucharistic Minister (for which I'm one, too) cannot attend a non-Catholic wedding.   Whomever told you such a thing is misinformed or mistaken.
