The coptic catholic patriarch does wear a byzantine hat instead of the coptic one like pope shenouda III. why is this so? i thaught coptic catholic would stick to the coptic tradition.

Perhaps its to show a visible sign of unity with the Bishop of Rome. Also I have seen various forms ib both in East and West.
